Ingredients
  

  • 1 cup cooked lentils
  • 1 red capsicum sliced
  • 1 zucchini chopped
  • 1 cup broccoli florets
  • 2 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Cooked brown rice or quinoa

Instructions
 

  • Heat the olive oil in a pan over medium heat.
  • Add the minced garlic and sauté until fragrant.
  • Add the capsicum, zucchini, and broccoli, and stir-fry until tender.
  • Mix in the cooked lentils and soy sauce, and cook for another 2-3 minutes.
  • Serve over a bed of brown rice or quinoa.
