Ingredients
  

  • 1 can of chickpeas drained and rinsed
  • 1 avocado mashed
  • 1 tbsp vegan mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Lettuce leaves or whole-grain wraps
  • Shredded carrots and sliced cucumbers for added crunch

Instructions
 

  • In a bowl, mash the chickpeas with a fork until they have a chunky texture.
  • Mix in the mashed avocado, vegan mayonnaise, and Dijon mustard.
  • Season with salt and pepper to taste.
  • Spoon the chickpea mixture onto lettuce leaves or whole-grain wraps.
  • Top with shredded carrots and sliced cucumbers.
  • Roll up and enjoy!
