1. Japanese Sunomono Salad

Ingredients
  

  • Thinly sliced cucumbers: 2 medium cucumbers
  • Rice vinegar: 1/4 cup
  • Sugar: 2 tablespoons
  • Soy sauce: 1 tablespoon
  • Toasted sesame seeds: 1 tablespoon

Instructions
 

  • In a bowl, mix 1/4 cup rice vinegar, 2 tablespoons sugar, and 1 tablespoon soy sauce until the sugar dissolves.
  • Add thinly sliced cucumbers (2 medium cucumbers) to the dressing and toss to coat.
  • Sprinkle with 1 tablespoon toasted sesame seeds before serving.
